Ingredients
1¾ cups of all purpose flour (I mix 1 cup 12 grain flour to all purpose)
1 teaspoon baking soda (if you use different flour mixture add 1/4 tsp more)
¼ tsp cinnamon
¼ tsp nutmeg
¼ tsp kosher salt
2 large eggs @ room temperature
1 cup sugar of your choice (I use palm sugar)
½ cup vegetable oil (canola oil works perfectly)
coarsely mashed 3 large ripe bananas (approximately 1.5 cups)
1/8 cup cream or plain yogurt
1 tsp vanilla extract
¾ cup walnut, hazelnut and almond mix (or either of those)
½ cup finely chopped dried cranberry or blueberry

Directions
Mix first 5 ingredients in a large bowl. In a separate bowl or with a stand mixer beat eggs and sugar till it gets creamy (~10 min). Add oil slowly and keep mixing. Add flour mixture fist and later nuts and fruits (optional). Pour mixture into a buttered loaf pan (mine is 23.5 X 13.3 X 6.95 cm). Bake for approximately 1 hour @350˚F (~175˚C) in preheated oven. Check it with knife. If it comes clean it means that Banana Bread is ready. Don’t over bake it. It should be moist but cooked. Remove from pan and cool on a rack.
P.S. I have tried the same recipe with carrot. It worked very well. If you want to try, use shredded carrot instead of bananas.
